I know the gears from myfords ml7 and ml10 will fit the ml2 which has a 5/8th diameter drive hole, so does that mean any gears with a centre hole of 5/8th diameter will be ok

No. The gears need to have a diametric pitch of DP20 (basically, that's the size of the teeth) with a pressure angle of 14.5 degrees, with the 5/8 centre hole.

You could use ML7 gears on an ML2 but you will have to drill the small hole for the drive pin that the ML2 uses where the ML7 has the keyway.
